Your first run: Poitín

Six steps from grain to your shelf.

You start where every distillery starts: unaged spirit, straight off the still. Make one, taste what your choices did, and the wood comes next.

  1. Choose your style

    Poitín first. Then Irish Single Pot Still, Single Malt Scotch, Bourbon and more.

  2. Mash

    Enzymes turn the starch in your grain into sugar. Your grain sets the starting shape of the flavour.

  3. Distil

    Pot still or column. Then make the cut: tight, balanced or wide. Heads, hearts and tails, your call.

  4. Age

    Pick the cask and the years. One day is one year, and Séamus checks in as it changes.

  5. Bottle

    Choose the bottle it earns, name it, and see the strength, the age and the angels' share.

  6. Display

    Every bottle goes in your cabinet, with a record of how you made it and what the wood did.

Whiskey takes years. Distill gives you the wait, at a speed you can live with. A twelve-year cask is ready in twelve days. In between, your phone tells you what the cask is doing.

A real flavour engine

Eight axes. Real chemistry.

Every whiskey you make is scored on eight flavour axes, and each one traces to the compound behind it. A long ferment builds esters. A worm tub keeps the sulphur. Charred oak gives you vanillin. It's a game, but the science is the real thing.
